Expatriate Kitchen Chef – Lagos – Blue Lodge Catering Limited

Job Description
To deputise in executive chef’s absence.
Ensure that all menu’s are constantly updated while paying special attention to seasonal availability
To ensure that all kitchen staff are constantly trained to effect good portion control and pleasing presentation of dishes.
To ensure that sufficient stock of food materials are properly stored in the right conditions.
To liase with management as regards special functions like vip’s functions.
To ensure that statutory hygiene requirements are followed diligently.
To assist with monthly stock taking.
You ensure that kitchen staff are dressed properly.

Requirements
Must be an expatriate with at least 10 years experience in a la carte, international cuisines and oriental dishes.
Must have valid resident permit if already in Nigeria.
Must have the ability to read, write, and analyse procedures, manuals and statutory regulations.
Ability to write reports, memos and present information to management and other staff.
Must have knowledge of food ordering,purchasing & inventory control.
Extensive food and wine knowledge is required
Working knowledge of computer programmes including word processing, excel and email.
Certificate of completion from trade school
